I have seen a Youtube tutorial that advises one of the left-most diodes needs to be reversed for the circuit to work.

Having never yet built one of these, it still looks as though that advice is correct. At the moment, both diodes would perform exactly the same task, making one redundant. It looks like it should either be reversed or omitted.

I'm not sure how much current would be flowing through the potentiometer, perhaps it's just better to use both legs.

Try it both ways anyway

How would I modify this to operate a 250 watt, 24 v dc motor? I'm making an electric bike. Would the 6v motor be replaced with a mosfet or relay?
